Can you get me the recipe for the Tom Khai Gai (I probably spelled that wrong)? My boss made it for us once and I am now obsessed with it.

 Yes.  As usual, I combined like 15 recipes and took it from there.

THOM KHA GAI

I used:

1 can unsweetened coconut milk

1/4 cup unsweetened coconut flakes

2 pounds chicken, cut into small chunks

1/4 whipping cream

1 can organic chicken broth

1 tsp fish sauce

1 tsp each:  curry, turmeric, garam marsala, cayenne pepper, salt, pepper

three cloves garlic, finely diced

1/2 large red onion, finely diced

Olive oil

Note: 2 inches of finely diced ginger root to the thom kha gai.

I sauteed the onions, garlic, spices, fish sauce, coconut flakes in olive oil in the bottom of my soup pot until the onions were clear.  Do this on low heat so you don’t burn the coconut.  Once that was done, I added the broth, coconut milk, cream and chicken.  Brought it to a boil, and simmered for about an hour.
