Black Bean and Beef Enchiladas

Black Bean filling - I completely made this up.
Soak black beans overnight, rinse and set aside
(You can use canned beans, too.)
Mince 2 cloves of garlic
Heat generous amount of olive oil in pan
Just barely brown garlic and add rinsed beans

Chocolate no bake cookies

For Aaron Jamison.
2 cups of sugar
1/2 cup butter
1/2 cup of milk
1/2 teaspoon vanilla
5 tablespoons cocoa powder
Bring these to a boil, stirring constantly. Let boil for one minute.
Add 2/3 cup of peanut butter and stir till it melts.
Then add 3 cups of oats, stir.
Drop by teaspoonful on wax paper and let cool.
Eat ‘em up because they are DELICIOUS.

I ending up getting a regular Dr. Pepper with lunch, so that’s one soda and one point down at once.
I also got a banana to munch on if I get hungry between now and dinner (which is another point), so I’m left with just one snacking point.
